This is an addition to this post on racing.
I researched more local races (in and around NC)
MTA Triathlon- http://www.mtatriathlon.blueridgemultisports.com/ “The triathlon consists of a 750 meter lake swim, 22 mile ride, and 5K run. 64 individuals and 6 teams took part in last year’s event, which took place under nearly perfect conditions. As expected, the move to May brought with it cooler weather and even faster times. The venue is breathtaking, with views of Lake James visible from almost everywhere on the course. Whether you’re a seasoned veteran or new to the triathlon experience, this is a must-do event.”
Mad Mountain Run- www.http://madmountainmudrun.com “A Mud Run is a race with the objective to conquer obstacles while getting muddy! These races have become very popular throughout the world, and we are proud to be hosting the 1st Mud Run in WNC. Our objectives are clear (unlike mud): create a fun and challenging event to draw mud-loving, extreme sports enthusiasts into our area with proceeds to benefit Hendersonville’s children’s museum”
Special Operations Adventure Race- http://soarhighlands.org “This one-day race will be held in Highlands, in the challenging terrain of the beautiful Western North Carolina Smoky mountains.
